This doesn’t work, as it only display future workouts. Not the ones in the past (I.e. yesterday).
Benchmark run is different. It’ll still be there as technically the coach training plan hasn’t started yet - once it’s started, rescheduling option for missed workouts doesn’t seem to be available.…

I missed yesterday's training and want to catch up today. I edited my training schedule, deselected yesterday in my cadence of weekly workouts, and instead selected today. The training missed yesterday now shows up in today's schedule. After the training, I will revert to my weekly schedule as before.
You can also simply select the workout on your watch without any schedule change. Do it directly on the watch in Activity Settings menu. See the example below:

If the missed workouts are not in My Workouts, they are in Training Calendar. Just tested it - yesterday I've set a training plan, skipped the first workout (Benchmark Run), and still could start it today through the Training Calendar. I edited the previous post accordingly.
I missed a workout and on the next day I could find it in the training calendar. The thing is the training calender resets each week, so once the week was over, it disappeared from that. So what trux did works only if you do it immediately after the day. Once it is reset, it is gone.
Well, as I wrote last week I've set up a testing Coach Plan, and the missed workout is still on my Trainig Calendar on the watch today too. I believe it only disappears if you intentionally skip the missing workout and do the next one in the meantime, but that sounds rather logical and reasonable - once you skip it, it is gone.
