You can add additional metrics, like the Power, Cadence, etc. if you have the appropriate sensors conected to your Garmin device that records the session. There are also many Connect IQ extensions that can add some custom fields and data to the Garmin Connect reports.
Thanks for your quick reply. That's not the issue I have though. After i perform a custom activity that I created from my watch, it then automatically appears on the app. However, by default it appears with a set of metrics that are not relevant to me. For example, I created the activity stretching on the watch. After I perform it it appears in the app with "distance" as main metric, which is not relevant to me. I would like to change that to "time" but I am not able to do so. Hope this is clear and that you can help with that! Thanks :-)

OK, that's actually a different issue than in the opening post. If you want different metrics in a Custom Activity profile, then all you need to do is creating the new Custom Activity profile as a copy of another activity with the metrics fiting your needs the closest. For the Stretching, you could use for example Cardio, Strength, or Yoga profiles as the template.
Other than that, you'd need to edit the FIT file with the definition of the Activity profile - you can find it in the folder //GARMIN/Sports/ on your device, but you'll need a tool for editing the FIT file, and a rather good knowledge of the FIT file structure.
One last question since you were so kind: can i create an activity profile on the mobile app and then send it to the watch? For example on the app i see that i can manually create the activity bouldering, which is then displayed with insighful metrics such as route grade etc. Is there a way to send this activity to the watch so that every time i perform it the data will be recorded automatically in the app with the same template?

No, sorry, that's not possible, you have to do it on the watch (if we exclude the FIT file editing)
