I want to edit my Garmin data after an activity (naming the activity and including notes) before Garmin Connect uploads it to Strava. In other words, I want to choose when to upload data to Strava. How can I do that?
You can't. Just edit it on Strava when it gets there. It's not Garmin Connect to Strava, it's Garmin front end machine to Garmin Connect and Strava near simultaneously. GC and Strava both get the same file, and the edits you make on Garmin Connect are never seen by Strava.
You might want to try turning off the automatic syncing between Garmin Connect and Strava and using tapiriik.com to sync. That's not an immediate sync and I believe it does pick up some of the edited data (how much I don't know), because it actually logs into Garmin Connect and grabs the data from there. I use it to sync GC to Runkeeper because the auto sync that's supposed to work between GC and Runkeeper never actually works. I know it picks up the name of the activity from GC. Otherwise you do what I do and make edits to Strava and GC separately.
