I had a big day (by my standards) last Thursday and broke my personal steps record - however my previous best is still showing on my profile.

Is there anyway I can fix that?

On the Personal Records widget there should be a 'new' icon (or link, I can't recall exactly) that you can click and confirm/accept the new record.
