Sleep duration is tracked using your heart rate. The watch understands your normal resting heart rate range and will use that information to know when to start tracking your sleep in your schedule. This is designed to help if you sleep a little earlier or later in your sleep schedule. It sounds like since it is tracking later your heart rate is taking longer to drop into your normal resting heart rate range.
If you think that you are having a heart rate issue I would recommend to make sure the device is up to date with software then power it off and on to clear the cache.
