Two hiking activities disappeared today. After initial syncing. I even edited one of them. I also lost related step counts. I have synced several times and switched on and off both my Epix Pro and IPhone

If they disappeared from Garmin Connect, then you perhaps have accidentally deleted them, or changed the date. Double check the history. If you do not find them in the past either, then they are still on your watch, and you can upload them to Garmin Connect manually.
