Only two options pop up when receiving a text, dismiss or phone assistant. Furthermore, the phone assistant won't work neither. I did notice something strange in bluetooth, its showing two Fenix 8. One as connected and the other as not connected. When I delete the not connected one it deletes both of them.

You can't reply to messages on iOS.

"The option to respond to text messages from a watch is not available through iOS."
