My long run day preference is Saturday but garmin keeps scheduling it for Monday or another week day. I don't have time for them during the week and I can't seem to move the workout days around on the app or on the desktop website.

When you created the plan you set the long run days. You can change it to other days. Click the cog wheel and edit the long run day: https://connect.garmin.com/modern/training-plan
You can also do workouts in advance. If you see the workout then just start it even if it is planned in the future.
