Not really taken away, but it may be cropped on some displays, just like shown below. If you see at least a tiny bit of the "Edit" label, tapping on it still works. Changing the font size in iOS settings may help to see it again. Or you can also edit the activity in Garmin Connect Web.
Adding an exercise works for me too. Just tap on the button at the bottom:
