Ok I found it eventually. You have to set to statute UK and then change stone in the weight display using the three dots in the top right. Pretty sure I’d already tried that but it worked in the end.
Really this should be consistent across all devices and stored in the user profile in the cloud allowing a separate unit preference for each metric (weight, distance, elevation etc)
