Why does my Garmin venu 3 doesn’t take knowledge of my stats from my garmin 830 on the bike?
After a ride my watch doesn’t see the intensive stats. Also the watch notifies me to take a walk after a ride of 3 hours.

If you mean the Intensity Minutes, then you should be aware that Edge 830 does not support this feature.
Not necessarily.
I do not understand what you mean, but as I wrote, Edge 830 does not support Intensity Minutes, hence the watch cannot take any intensity minutes from it. Metrics like Training Status, Training Load, Training Effect, FTP, HRV Status, Recovery Time, etc is shared between the devices, but you have to sync both of them before and after each activity (sometimes you may need to repeat the syncing twice in order that all data is exchanged).

Hmm what I try to say is. When I cycle for 3 hours for example. My heart rate is up, the edge knows how long I cycled.
And then when I return home. The first thing my watch says I have to get up and move. Does the watch only look at the intensity minutes?
Move Alert is based on the motion detected by the watch. AFAIK, its functionality is not influenced by Physio TrueUp, and not shared among multiple devices. It only takes in account motion detected by the accelerometer of the watch self. You can disable the alert, or you can wear the watch while riding (even in the backpack, or in the pocket, if you do not want to wear it on the wrist).
