YouTube notifications 3 days late

3 days after the notification appears in the notification bar of your phone? Was your watch disconnected from the phone for 3 days?

The watch can only display notifications that appear in the Notification Center of your iPhone, and when they do and the phone is connected with the watch, there is no delay. In your place, I'd check first whether the YT notifications really appear timely in your iPhone's Notification Center.

No when the notifications come through on the watch I check the phone and sometimes there not there.

Every other app that sends notifications is spot on, it only seems to be YouTube that’s off sometimes.
