It's possible following a Workout From Garmin Connect using google maps for Fenix 7X?

You can follow a course while following a workout. I'm not sure what you mean by "using Google Maps".

In the case you mean seeing your past activities in Garmin Connect on Google maps instead of Apple maps, then you can do it with Garmin Connect Web - there you can chose either Google Maps, HERE, or OpenStreetMap.
