It's possible to view on your phone using the LiveTrack feature. When you set it up, add your own email address as a recipient. Once you start your ride, you'll receive an email alert from Garmin with subject "Watch live activity now!" Then during the ride open the web link provided in the email, which should open the web browser on your phone.
Just know that this is going to access the Internet, so if you're in a limited coverage area, it could be spotty. Also it's going to use up cell data.
