Why I am forced to select an exercise when creating a workout

I just switched from Fitbit to Garmin due to the poor heart rate monitor of Fitbit. However, the software of Garmin is a nightmare. I bought a vivoactive 3 yesterday and used it this afternoon. When I started the watch to track my training, I was overwhelming. There are too many choices and actions. It might be good that there are many exercises people can follow. But I don't understand why I have to operate the watch to tell I am going to do the next set. I just want the watch to track my activity (HR), silently. Also, it does not need to know what I am doing. I have no choice but to turn off the workout mode.

Then I thought there may be some operations for creating custom workout so I don't need to be bothered by the watch. Yes, I found it. After I created a custom workout and would like to send it to the watch. Garmin Connect told me custom workout is not supported on vivoactive 3. After doing some research, I found I can only customize run, cardio, strength, swim, etc. Except for the high-end models, each series only support customizing a limited range of types of workout. It looks like Carmin Connect told me that I am not rich enough to add a custom workout.

That is fine. But why I have to select an exercise when creating customized strength training. Are there any virtual exercises I can choose? I just want to do exercises on my own instead of following a watch.
