2 hours bike ride is shown as activity but is not shown to weekly intensity minutes

Sometimes a ride is not calculated to the weekly intensity minutes (not always).

How did you record the ride? On a bike computer or activity tracker?

The Edge bike computers don't calculate intensity minutes. Activity trackers do (as far as I know).

Edge 1030 does provide intensity minutes to Garmin Connect and I think older devices sending FIT files should do the same.
