Garmin Run Coach Training not movable

How can I postpone a workout in Garmin Run Coach by one day? The three-dot menu does not appear as described in the instructions. Does this only apply to the Coach plans?

Indeed it only applies to the original Coach Plans (with named coaches). The new plans do not need any rescheduling. If you skip a day, the plan adjusts automatically.
