Phone Strava 10.29 miles, Fenix 7 solar sapphire 6.63 miles

Why have I got such a disparity between my phone and watch distance?

Watch is set to

Satellites - All + Multiband

Data recording - Every second

3D speed - On

3D distance - On

Would love them to be closer! Any advice on what I've done wrong?

Most likely you did not calibrate the speed (& distance) sensor on the ebike. Check its options in the menu Sensors & Accessories, on the watch.
