To add activities, first verify that you have In Focus toggled on.
Then add at least 1 of the Activity Trends cards.
From then on, in the In Focus section tap on the '+' to add an activity.
…If you prefer not to have the overly large in focus tab on your Home Screen you can go to the more tab then activities and then create manual activity.

If you also want to count the run towards challenges and badges then you can log a 1 second run on the watch. Stop, save and sync. Then in Garmin Connect you edit the activity. Change the date and time, duration, distance etc. to when and what you really did and save. That way you will get the activtity saved and also make it count for challenges and badges.
