Depends on your watch and whether you're referring to "workouts" or "activities." Just select your activity (Run, walk, swim, bike, etc.), press start, do the activity, press stop, then save.
If you really mean "workouts," those can be part of an activity, but don't have to be. Most watches will have a generic strength workout called "free," where you just do your workout with no pre-planning. For this you'd select the "Strength" activity then select the workout you want to do.
You'll also have a number of pre-loaded workouts (again depends on your watch model). For Running, you'd select the run activity then you can choose one of the associated workouts. Or don't chose a workout at all, just start the running activity and go.
There are many more workouts available on Garmin Connect for you to download to your watch, or you can create your own custom workout. How much you can do with this feature also depends on which Garmin watch you have.
Best thing to do would be to go to Garmin Support and lookup your watch. there will be several "getting started" videos listed.
