How do I record open water swims?

You can't on the Forerunner 245. At least not with any built-in activity profile.

You might consider using a CIQ app as a workaround, such as - F3b SwimSports+ | Garmin Connect IQ

Thanks seilogramp. I will continue to use pool swim to record my open water swim until I am ready to upgrade my watch.
