You did not tell what activity type, and what device model you use. The best would be asking on the forum dedicated to your device model, since each device may store different data. The same goes for different sports - some may store the elevation gain, others not.
I checked some running and cycling (MTB, gravel, and road cycling) activities made with my Instinct, and with Instinct 2, and none of them have the Elevation Gain column. They all have, though, the Total Ascent and Total Descent columns, so the elevation gain is easy to deduce from it.
For example if your device does not have the barometric altimeter, then it is quite probable it would not store any elevation data into the laps table.

Yes, sorry, did not see it. But you still did not tell what activity you are looking at, so that I could compare. If it was cycling or running, then as I wrote, I do not have Elevation Gain, but I do have Total Ascent and Total Descent. You best move the thread to the Fenix 5 Series forum (click More » Move under your opening post) and ask owners of the same device, since it is a matter of the device what it writes into the Lap table of the activity fit file, not an issue of the app.
Otherwise, if you find your device does not support the Elevation Gain, or Total Ascent / Descent in the Lap table, it can be done relatively easily with a CIQ Data Field app. If you do not find any in the CIQ store, post here and on the CIQ Developer forum, and someone will perhaps write it.
