VO₂max is no more used for the Fitness Age on recent watch models. Read more about it here:

As for the VO₂max, just make a new activity to get it measured again. Preferably using the Run activity profile, and respectign the followign conditions (quoted from the document https://support.garmin.com/en-US/?faq=lWqSVlq3w76z5WoihLy5f8)
Running activity must be 10 minutes or longer in length. (some watches, like for example vivosport, require up to 15 minutes in length)
Activity must be recorded outdoors with a GPS signal.
Heart rate data from either a built-in optical heart rate sensor or from a chest strap.
Heart rate must be elevated to at least 70% of your maximum heart rate for at least 10 minutes continuously (again 15 minutes at some models, like vivosport)
As for the Fitness Age - if your watch does not use the new method for the fitness age, then it looks like the old method is buggy, and it may be also one of the reasons it is no more used now.
