Did you sync with Garmin Express? I noticed that the last version cleans up the activity files from the folder //GARMIN/Activity, so it might be well the reason for the disappearing from the Last Run widget.. The activity should, though, still be listed in the History (accessible through the Menu on the watch).
Another possibility is that you accidentally recorded the run under another activity profile (i.e. Walking).
