I can't say for sure but it's most likely because that is the recommendation from various health resources in America is a minimum of 150 minutes of moderate or 75 minutes of aerobic activity per week in addition to two days a week of muscle strengthening training. The recommendations do not go beyond a weekly recommendation as there isn't any evidence that there is any increased benefit to doing 30 minutes, five days a week vs 50 minutes, three days a week in terms of overall health benefits. Performance is a different matter potentially. Even though things like 10k steps or 10 floors per day are often cited metrics, they aren't actually part of any official recommendations from any national health resources that I know of in America. If you look at the links below from the CDC and American Heart Association regarding recommendations for minimum activity levels, there is no mention of step or floor counts, although those can potentially be ways to achieve health improvements.

Thanks. I am just trying to understand why I have to go to the web version of connect, when I have it on my phone, and a widget on my watch called My Day, that features steps, calories, and stairs for one day at a time, but insists on a weekly total for Intensity Minutes.

You do not have to. Tap the chart symbol in the top right corner of the IM card, then tap the line with the current week, and you will see the IMs by day.
Maybe I am missing something, I only see a chart when I do that. My IMs vary from 60 to 300 daily depending on workout day, so the scale makes the chart kind of useless. In any case, it doesn't change the simple question. It is a daily number like steps or stairs, put it in My Day that way, not as a weekly number. Various watch faces show it daily, it is obviously not hidden.
As I wrote, tap the row with the current week (or any other week) under the ring chart, and you'll get a detailed bar chart per day.
And the answer to your original question: the main screen shows the weekly IM, because unlike Steps or Calories, the IMs are a weekly goal.
