My Fenix 5 says I climbed 2 flights of stairs and decended 6, that is impossible because I have a 2 story house and I go up and down that one flight of stairs all day long.

In order to count floors correctly, your arm needs to swing freely, so the watch knows that you are walking up/down stairs and not for example riding an elevator. So if you carry anything or hold the rail, then floor counting might work unreliably.
Also, a flight of stairs is credited when you ascend 10 feet. There are also some calibration implications. If you choose an activity watch that uses the barometric pressure sensor and wait 30 seconds before starting, the sensor will calibrate the starting point.
There is also some IQ apps that report the ambiant pressure it senses.
