Why is my VO2max rapidly decreasing whenever I do an intense workout?

In the last week, my VO2max on Garmin, which has previously stated pretty steady, has dropped quickly after each workout. The odd thing is, I've started a higher intensity programme than my previous ones. I'm not making any great claims but my effort has been pretty high and my fitness/effort level on Strava seems to reflect this accurately. So why has my VO2max dropped from 53 to 47 in a week?
