I have a Garmin Instinct Solar watch and 4 of my friends have the Garmin Edge 130. For MTB activities, they are recording nearly twice the total GPS elevation as I am for the same exact ride. Why such a huge discrepancy?

Try protecting the pressure sensor hole. It may be clogged with dirt, sweat, or simply covered with the skin, if the watch is too close to your wrist. When unprotected (i.e. by a sleeve or a sweatand), wind gusts and air flow can impact the reading as well.
