Is there a way to download my hiking track from the Vivoactive3 to a map app or Google maps??
Well, you can see the hikes on a map directly in Garmin Connect, so not sure why you want to use Google Maps, but if you really prefere it, you can export the activity in Garmin Connect Web in the GPX, or Google Earth file formats (among other possibilities), and then load it to Google maps or any other similar app.
On the screen of each hiking activity (assuming the GPS on your watch was active during the activity):

Yes, if for some reason the map in Garmin Connect is not sufficient, and you want to load the track to an external application do it in the way mentioned in my previous reply - export the ativity in GPX or Google Earth file format and load to to Google maps or Google Earth.

Do I need to go in and turn gps on before I start everytime??
Rather tap the share button on that screen and share the WebLink to the activity here, than sharing the screenshot. The screenshot is not really helpful for telling you what is wrong. One of the possibilities is an expired EPO file: Expired EPO on a Garmin Outdoor Watch
