Not built in, but the majority of Garmin devices allows to create a custom activity, what I supposed the original poster did. However, reading it again, he actually wrote the opposite - that he created it on the phone, and does not see it on the watch.

I am not sure where on the phone he created it, but for creating a custom activity on the watch, it is enough to enter the list of activties on the watch, calling the menu, scrolling to the option Add, and the following the process till the end. However, the exact process differs from device to device, so the best way is looking up "custom activity" in the user of the respective device.

But creating a custom activity profile and naming it "Horseback riding" won't produce activities of that type, and THERE IS "Horseback riding" in Garmin Connect, but not on devices.

Depending on your device, you might be able to find an appropriate IQ app in the app store. There are apps (although not necessarily compatible with all devices) that can record activities with type set to anything available in Garmin Connect.
