I have a Vivoactive 3 Music. Even though I don't always wear the device when going to bed, the Connect app shows sleep tracking data. Why is that? Shouldn't there be data only when wearing the device?

You must be in the minority. Personally I think it's unacceptable how poorly Garmin is deriving sleep info
As I stated, if that's a new feature then it would be nice to have an option to turn it off, cause I don't like it. I want my watch mesuring to be precise.

Mine is doing this as well. I have had the Vivoactive 3 for almost a year and it never tracked my sleep (because I don't wear at night) until a couple of months ago. Now it tracks sleep even though I am not wearing the device. I have noticed the battery doesn't last as long as it did when it did not track. Does it have to do with the an update???

I dont think so. It is only a change in the way of displaying the sleep data when they are not available, and not in reading the HR of the environment. Or are you telling that the HR sensor lights all night long now even when you do not wear it?
My requirement is simple:
1) I do not wear the device during my sleep.
2) I still want to know if I am sleeping enough and how much.
Given the discussion above, the solution is:
Wear your device all the time when you are awake. Don't forget to switch it on :-)
Get up in the morning and immediately wear it.
Stop wearing it when you go to sleep and not earlier. Don't forget to switch if off.
All sleep will be marked as deep sleep.
