If you really mean the Garmin Connect app, then the pace is the standard way to show at "foot" disciplines (walk, run, hike, ..), while speed is used for cycling. At swimming 100m pace is the standard. You cannot customize it.
If you speak about the watch, then most models allow you to customize the activity screen in many ways, and showing the speed instead of pace is no problem. The exact way depends on the model you use. Consult the user manual of the model you own, and read up the section about customizing your activity screens.

It's ridiculous & typically for big companies. No vision, no courage.
Time/distance use dates from the time when only cars could measure distance. We have GPS for many years. But the old custom stays much longer that it should. A non-productive interaction between users & manufacturer's. The first being sheep and the other not bothering about what's logic but only looking at the cents! It's obvious that the first are to blame most.....
Garmin does have the possibility to choose. But not in all profiles I think and not perfect as some things (header, export file) don't change accordingly. Which is another aspect of big brands and Garmin in particular: never perfect!

There is a simple solution if you dislike big companies like Garmin, and their behaviour - stop supporting them and buying their products Support small ones, listening to you, or create your own product.
