Some 910xt .fit files missing

I know where my files are stored with Garmin Express 3.17 (8/4/14 to Present)
C:\ProgramData\Garmin\GarminConnect\Device

I know where my old files are before Garmin Express (upto 5/20/14)
C:\Users\UserName\AppData\Roaming\Garmin\Devices\DeviceID\Activities

But where are my file that are on my device between the two in older versions of GE? (5/21 - 8/3)?
OR a better question is how I get the "tweener" .fit files off my device and stored?

If you were using an old version of Garmin Express, you may have been affected by an issue where the fit files weren't backed up to your computer. It sounds like you've updated Garmin Express, so this shouldn't be an ongoing problem. All you should have to do is send your workouts from the 910 again. You can do this by going to Mode > History > Transfer All.
