Map from tracks (drive around making tracks then edit into map)

I promise I've searched and randomly read posts looking for a start but obviously I've not found the answers I'm looking for. Be gentle please.

The goal is to create a map of Jeep trails and include data such as trail names and POI's. The output to be converted to a pdf and also saved in some form that can be uploaded to a GPS. Note that in my case it's a Jeep but the same situation could apply if the person was a hiker, ATV'er, or snowmobiler, etc.

What I've done is drive around on the trails creating tracks with my Oregon 200. When I could I would stop at intersections or where the trail ends saving that track and starting a new one. Inevitably, I drove some of the same trails twice or more so in places things are messy. Now I need to figure out how to edit these tracks which includes deleting track portions, adding labels, etc.

I've looked through the Garmin tutorials, this forum, and even some Google searches but I can't seem to get anywhere. Can anyone point me in the right direction?
