I think that only the content of lists can be sorted ascending or descending. Not the map of lists itself.
About the content of lists, what I found is that when changing the date style in Windows to something like 2019-11-27 my Garmin Fenix 5 (and 6) create entrees in that same format, so that they are actually sorted by date.
