look on your device if you have a .GPX file. It probably is in \Garmin\GPX If you find the file check the time and date of creation if you have the one you want to edit. Open the file in a textediter like notepad. Find the lines with "elevation", change the values. Best to do this with a "find and replace" function.
I've checked on the Virb, and, although I can find the .FIT files for this morning, the .GPX files are missing, are they deleted at the same time Virb Edit deletes the video files?
I don't own a VIRB (yet) so I'm not really sure. There are .fit files that contain GPS information, including hight. If your elevation is in the .fit file, you can't do anything with it. (I read about someone wanting to convert it to something readable, but that seems to be impossible, hopefully they are wrong) You can try adding this .FIT to a piece of video in VIRB Edit and see what an overlay with "elevation" does.

The easiest thing to do is upload to Garmin Connect and then export the activity as a GPX. I don't know whether this preserves everything now (it used to drop temperature data), but it does include altitude. A GPX file is simply an XML text file, and they can be edited and manipulated as desired.

In ~/Library/Application Support/Garmin/VIRB Edit/Database, although they're buried and I don't know whether they're preserved if you replace the GPS track in VIRB Edit. ~/Library is by default hidden in OS X, but there are ways to make it visible in the Finder, and you can always get there by the command line.
