How can I fully reset my heart rate zones?

At some point my watch detected a maximum HR of 250 (or similar it was clearly a spurious reading) since then I can't make the zones or the lactate threshold work. The lactate test wants me to warm up at 180bpm at the moment. I've reset the heart rate in Garmin connect but a hard run today showed as zone 2. Any ideas how I can convince the watch that I would die at that heart rate?
