Can you choose when updates are applied?

I assume it was a software update, but our 735XTs both updated when starting an activity. Some devices update when they’re charging or based on the local time (eg overnight).

Is there any way to set this?

Also, as the latest update to the 735XT seems to be a couple of years ago, to 9.8, what was the update likely to be anyway?

On the FR735XT automatic updates can be disabled altogether, so the watch does not update unless you specifically tell it do so. I don't have my 735XT anymore, but the look in the system settings.

Hard to say. Might have been the time zone map, for example.
