I'm considering buying the watch. I would like to know how the stats at a glance work

If I just flick my wrist, I can see two stats as far as I understand.

What stats is it possible to choose from?
Is current heart rate one of them?
Is is possible to have more than two stats shown at the same time?

Time, Batt, Steps, Floors, Intensity Minutes, Seconds, Calories, Day/Date, Date, Weather, Calendar, Status, Heart rate
