I bought my watch in April and had this problem constantly. In late August, I upgraded my phone and there were also firmware updates about the same time. Now Bluetooth on the watch works as it is supposed to. I do not know what caused the fix. However, now my edge 830 does not like to connect (it used to always work). Go figure. I am now using android 10 on a Motorola phone. This is a very common complaint with Garmin. Apparently some combinations of phone and software work well and other not.
Same problem here. Very annoyed by this issue. I shut the Connect App, reopen it and it syncs and reconnects immediately.
My wife is also having problem with her watch not connecting to the phone. She have reset the watch two times (factory reset) and then it connects again to the iPhone via bluetooth. But she will not do the factory reset anymore and I understand that, not very exiting to reset the watch every time the bluetooth connection dies. I wish Garmin could have this text in the features list (so people can avoid buying this piece of ***);
Hello! I apologize this issue has not been corrected. We currently have a case regarding the blue tooth connection and the device not automatically reconnecting back to the phone, it has been escalated. In the meantime, we have a workaround until this gets resolved.
If you can open your Settings app > Bluetooth and tap on the name of the device (not on the (i) symbol, but on the name of the device itself). This should cause it to reconnect with the watch. Note that this will not permanently resolve the issue, but should cause the phone to reconnect, after which it should stay connected for a while.

Not working, the watch does not even show up in the list of Bluetooth devices when searching (tested with with 2 iPhones)... but my neighbours soundbar shows up though.
