Cannot help with the 'Other' type - I do not use it for any activities involving distance, but can't you simply create a custom activity profile as a modified copy of the Running, Cycling, or another activity already using the speed/pace fields…
Yes this section could use some attention for users to get creative. I don't swim, cycle or run, all that's left to challenge is steps which is a bit boring.
