People have been asking this for years now and Garmin still haven't include stroke fields (count, cadence, distance per stroke, etc) in Kayak activities.
Kayaking is a serious olympic sport for so long and Garmin still neglects it, giving more importance to activities like SUP, Kiteboard and many other "recreational" sports.
Also Garmin included "Kayak" activity app only in the most expensive models a few years ago, just for it to act like a scam. People buy top watches to have access to Kayak app, like I did, just to find out it is useless! It wont even show proper activity icon in garmin connect, only the generic "other" icon (standing open arms man icon).
In the end we have to use SUP app, consider 1 SUP stroke = 2 Kayak strokes and maybe change it to "Paddling" later in Connect app.
Please garmin fix Kayak activity with proper icon showing, include stroke fields and also activate better activity map with speed colors along course.
You could also include more data like stroke balance between left and right side, stroke duration in miliseconds, etc, similar to running dynamics info fields.
Another suggestion is add a Surfski activity app wich might include runs (waves) detection and count, similar to how this function works in Windsurf app.
