I was wondering the same. All of the marketing images show the 5x with a more detailed watch face over the regular 5. I'm hoping that the watch faces can be customised on the 5 to look the same as the 5x in the marketing pictures.

I just picked up my Fenix 5 yesterday.
Once you go in to Watchface Customise, you have the following options:
Dial - face design
Hands - design of arms
Data - this is probably what you were asking... more on that below
Accent Color - second hand arm color
Bkgd. Color - black or white background colour
In regards to Data, these are the options:
Mini icon indicating battery charge, alarm state, phone icon, moon icon (Do Not Disturb mode), GPS
Sat 8 (Date format 1)
8 Apr (Date format 2)
'Steps' (Daily activity)
'Calories burned'
'Stair case' icon with number of levels climbed
'Flying alarm clock' icon? Intensity in Minutes
'Batter icon' 99%
'Sunrise' icon and time
Alt 43 (altitude)
A line pointing right (barometric trend) - thanks Tangmu
'UTC' and time
'Next Appointment time'?
Last Notification (eg. SMS, alerts, appointments, etc.,)
'Icon of person standing' (like 'Last Activity' but with 3/4 of a circle surrounding it) with 'x Hr' next to it. Not sure?

Nothing/Blank so you can keep the watch face clean
Icon of person standing could well be recovery time. My person has a green bar over it and 7 hours next to it. I believe the green bar matches the training status widget, i.e. Green is train as usual.
