I just updated to Version 4.69.1.5. Seems to have fixed the issue.

This seems to be a misunderstanding. Your paces for your workouts haven't disappeared, they are "just" not shown on the iOS App. They are still visible in GC Web and on your watch.
It is a nuisance, yes. But nothing more.
Could Garmin test and communciate this a little bit better? Maybe.
But: you can still go ahead with using your watch and train the same way as before.

You can still go ahead using your watch and train the same way as before. Until this issue is fixed your training details are visible on the watch or in GC Web. You can still setup new trainings and synchronize them to the watch, no problem.
I personally have no experience with Coros, but usually DCRainmaker has an opinion.

Very disappointing. Some data has come back to plan and definitely not what it was in the last two weeks of training of my half marathon. Had speed repeats programmed for this Sunday x3 1 min 3:57/k - 1 min jog + x10 3:30 min at 3:57 -3:30 min jog. Now my watch it is showing an easy run on Saturday and speed repeats on Wednesday x10 30 seconds run (no time) and 30 second jog. Which.
This training was the first speed repeats I did 4 months ago.
Is it possible to bring back my schedule?
I started running on February, very disappointing this situation with only 2 weeks left.
