Assuming you have a FS510 you still cannot just connect to WiFi at will. AFAIK it exists for the purpose of Database Concierge. So only when you go to update the databases will the WiFi become "active" and allow the connection.
You are correct. Once the Garmin Pilot is connected via Bluetooth and the avionics sees that there are databases available in the app to transfer the avionics will prompt a Wi-Fi connection to transfer the databases.
