Yes, this can be done relatively easily. Create a 'Collection' (e.g. walking in Northern Ireland) and put the routes and waypoints you require into it. You can then set Explore to sync this collection, in addition to the default collection. I find the easiest way to set this up is by using the web page eur.inreach.garmin.com/devices to select the collections you want to sync. The phone app will then sync according to these settings.
i think it is better to do it i Garmin Connect web. when i do it in Explore elevation data dosent get sent to device. Dont know if i do something wrong.
