I'm really missing a watertemperatursensor on the new Fenix8! They were the very first with the skin temperature but now, no watertemp messurement?
Why? :(

Assuming you mean for pool swimming then it’s been like that for a while with Garmin watches. For OWS it is there and working.
I'm not a fan of DCR, I find him overblown and long-winded but read this for more background - https://www.dcrainmaker.com/2021/10/fascinating-reason-temperature.html
Here’s the meat and…
He mean that is trolling as usual in forums of Garmin. i don't know why that user still is not banned. He thinks is some professor of internet who knows all things and he don't know nothing.
They have disabled it for pool swim since, in their opinion, could damage sensor.
what do you mean by disabled? are you talking about the skintemperaturesensor?
No, i mean internal sensor (barometer altimeter thermometer).

there is no air-thermometer in the fenix. maybe one for electronic supervision inside the watch... but not for air/water outside the watch. Or am I wrong?

OSW = Open Water Swimming
The barometer/altimeter sensor has also temperature sensor to compensate altimeter/barometer values, this value is what you see when you select temperature data field, skin temperature is another sensor but works only during sleep time.
Not practical at all, but if you tape a Garmin Tempe ANT+ sensor on your watch you will get a few datapoints from it during pool swim. But nowhere near a complete registration because ANT+ signals do not travel through water. Obviously you can't see the display when you do that. Or wear an old Fenix 3 on your other wrist just for the temperature. Also impractical.
