I’m off the grid for around three weeks and can’t sync my watch in this time. How long is the data like daily steps, sleep, etc. saved? Can I sync it after three weeks and nothing is lost?

If your watch does not crash it should work. If it crashes the file with that data is lost.
Don't know if there is a recording time limit.
Steps and other all-day metrics are stored in fit files in the folder //GARMIN/Monitor on the watch. The data is split into multiple files per day, and they stay in the folder until they are successfully…

Steps and other all-day metrics are stored in fit files in the folder //GARMIN/Monitor on the watch. The data is split into multiple files per day, and they stay in the folder until they are successfully synced to the GC account. There is no time limit. Theoretically, insufficient room on the storage may present a limit, but it is extremely unlikely at Fénix 7. A crashing watch can cause a corruption of a file that was being written to during the crash, but even when it happens, only a very small part of the monitoring data would be lost.
