Thank you for your answer. I'm a rather newbie digging deeper in the variety of features of advanced sports wearables. But as far as I understand and my practical experience Stamina could be very helpfull for Hiking and such. Do you think that in Hiking and/or Climbing in the Mountains you don't push to your endurance limits especially when you are out for expeditions or for long walks over a couple af days? I think that the value of this feature depends on for how much and for how long you push in all of long term activites and therefore it should not be llimited to certain modes. But that's just my two cents.
What I did was to just copy a running activity and then 'Hke-ify" it with hiking relevant data fields. I include stamina, pace pro, accent/decent and so on.

I think stamina feature for hikers is long overdue and I aways thought it was odd it wasnt an available hiking activity data field.
I copied trailrunning activity and individualized it including stamina and named it myhike. BUT after using my new and individually named activity it is then saved by the name of the copied acitivity. In my case the actual hike is stored by the name of trailrunning. So on first sight I can't differ trailrunning from myhike, which defintitely is a bug and should be solved by Garmin. But more importantly, I doubt that the algorithm of trailrunning is the same as it should be for e.g. hiking. Maybe that's the reason why stamina is a feature which is only implemented to run and bike. At least Garmin should address to naming bug when copying and renaming an activity.
My understanding is that the watch needs a work output metric for the activity (like pace for running or power for biking) to be able to calculate your aerobic and anaerobic capacity and estimate the rate at which your draw it down, in addition to "rest" decay. This type of metric (like W' or dRFC is typically evaluated based on your max output duration curve.
From the Garmin link:
"This includes examining training durations, distances covered, training load accumulations and load distributions for meaningful patterns that reflect fatigue resistance and personal tolerances for aerobic and anaerobic exercise."
If I am right, I am not sure there is a solution for hiking: power or pace would not work very well for hiking because of the typical changes in grade.
