You can get all that in a device app.

File>new>Connect IQ Project
And then select "Watch App" as the type. (that's a leftover from the days CIQ was only on watches, but they are really called "Device App" today)

For elapsedDistance, I've activated Simulation> FIT data>Simulate Data and nothing happen (for this value only)
Did you start the recording? You can do that by clicking the start button on the device or from the menu data filed>Timer>start activity
The Data field menu is greyed out
